5. The hatching in Saint Paul en Jarez



The Paul Bocuse Institute's valedictorian needed a place to match his skills. And this splendid castle from the beginning of the century, north of Saint-Chamond, fits the bill. The hotel-restaurant, renovated in a contemporary style that nevertheless respects the style of the time, is the current destination of Pierre Carducci, who has worked at Collonges-au-Mont-d'Or and at Têtedoie. He creates a professional cuisine, uncluttered and well presented, where the products are worked with great respect. The "Menu de l'instant" is a good first step, with Chinese cabbage, parmesan, tomato confit and anchovies, line hake, verbena, corn and potato, beef, red cabbage and chanterelles, dark chocolate, fig and agastache. The restaurant is located 50 meters from the castle. In summer you can eat on the terrace which has a magnificent view on the whole Forez plain. Specialized in frog legs, grated meat and tartifourme. Very good value for money. Be careful to reserve well because they are very often full.
